Raspberry Oatmeal Muffins
Ingredients
- 1 ½ Cups whole wheat flour
- ½ Cup oats
- ½ Cup brown sugar
- 1 Tsp baking powder
- 1 Cup Greek yogurt
- 1 ½ Cups milk
- 1 Egg
- ¼ Cup oil
- 1 Tsp cinnamon
- 1 Tsp vanilla extract
- 1 Cup raspberries, lightly mashed
Instructions
Preheat the oven to 350 degrees. Line a muffin tray with muffin liners.
In a bowl mix the whole wheat flour, oats, brown sugar and baking powder. Set aside.
In another bowl combine the Greek yogurt with the oil, milk, cinnamon, vanilla extract and egg.
Add the yogurt mixture to the flour mixture and mix until everything is well incorporated.
Add the raspberries and with the help of a spatula mix them until they are just incorporated.
Divide the batter between the muffin liners and take to the oven. Bake for 25 minutes or until done.
Remove from oven and let them cool.
Notes
You can change the raspberries for your favorite choice of fruit.
