Blueberry Pie Oatmeal in 5 Minutes
Blueberry pie oatmeal - a yummy, fast, easy and filling breakfast recipe!
Ingredients
- 1/2 cup rolled oats
- 1/2 cup milk or almond milk
- 1/2 cup water
- 1/2 teaspoon vanilla
- Pinch of salt
- 1/2 cup blueberries, divided
- 1 teaspoon butter
- 1/2 teaspoon cinnamon
- 2 tablespoons vanilla Greek yogurt
- 2 teaspoons maple syrup
Instructions
- In a medium microwave-safe bowl, add oats, milk, water, vanilla, and salt. Stir to combine.
- Microwave for about 3 minutes, or until oats are cooked through.
- When oats are cooked, add half the blueberries (1/4 cup), butter, and cinnamon. Stir to combine.
- Top oatmeal with yogurt and remaining blueberries. Drizzle maple syrup on top.
- For extra sweetness, you can add 1 tablespoon brown sugar or 2-4 tablespoons applesauce.
Tip: To keep oatmeal from bubbling over in the microwave, place a wooden spoon across the bowl while it cooks.
