Layered Chocolate Peppermint Cookies
You had me at marshmallow cream!

Seriously, this rich chocolate cookie is balanced out with a creamy marshmallow filling that pairs perfectly with these layered chocolate peppermint cookies.

Make up a batch for your holiday company. Or make up a plate of them for Santa.

This yummy treat starts with the same base cookie recipe as in our Triple Chocolate Nutella Cookies.
From there, it gets a face lift with yummy bits of peppermint and peppermint flavor. Split the dough and make half a batch of each.

Then sandwich two cookies together with a creamy inside filling. They’ll be hard to share.
Chocolate Peppermint Cookies Recipe

Layered Chocolate Peppermint Cookies
The perfect Christmas cookies, these Chocolate Peppermint Marshmallow Cream cookies will be a hit with everyone. Decadent, sweet, marshmallow creme filled!
Ingredients
- Cookie Ingredients:
- 1 cup butter (2 sticks), softened
- 1.5 cups sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp peppermint extract
- 2/3 cup cocoa powder
- 3/4 tsp baking soda
- 2 cups flour
- 1 cup chocolate chunks (optional)
- 4-5 candy canes, crushed
- Marshmallow Buttercream Frosting:
- 1 7oz jar Marshmallow cream
- 1 cup butter (2 sticks), softened
- 2 cups powdered sugar
- 1 tsp vanilla
Instructions
- Preheat oven to 350°F.
- Beat together butter, sugar, eggs, vanilla, and peppermint until light and fluffy.
- Add cocoa powder and baking soda. Slowly add flour until well combined. Toss in chocolate chunks.
- Use a cookie scoop for uniform cookies and drop by the spoonful onto an un-greased baking sheet.
- Sprinkle with crushed peppermint pieces liberally.
- Bake 8 to 10 minutes. Allow to cool for a few minutes, then remove to cooling rack.
- Mix together butter, marshmallow cream, powdered sugar and vanilla until smooth.
- Spoon marshmallow cream filling onto one cookie, then sandwich with another cookie on top.
