Cookie Ingredients:
- 1 can pumpkin puree
- 1.5 cups flour
- ½ cup vegetable or coconut oil
- 1 egg
- 1 cup brown sugar
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tbsp cinnamon
- 1 tsp ground cloves
- ½ tsp ginger
- 1/2 tsp vanilla extract
For filling:
- 1 block cream cheese, softened
- 2 tbsp milk
- ⅓ cup powdered sugar
- 1 tsp vanilla extract
Instructions
- In a small bowl, whisk together flour, baking powder, cinnamon, ginger, and ground
cloves. - In a large bowl, beat pumpkin, oil, brown sugar, egg, and vanilla until smooth.
- Gradually beat in your dry mixture, and continue beating until evenly blended.
- Using a cookie scoop, drop batter onto a lined baking sheet in 1-inch units, leaving at least an inch between each one.
- Bake at 350 degrees for 15 minute, or until tops are well set. Set aside.
- While cookies are cooling, beat all filling ingredients until smooth. Scoop into a piping bag.
