Pumpkin Pie Layer Bars
There is nothing better than a slice of pumpkin pie once it hits fall, and homemade is always better than store bought.
It just isn’t quite fall yet until I’ve had a slice of pumpkin pie.
But traditional pumpkin pie, while it has a taste I love, lacks texture.
I was looking for something more to make it a drool-worthy recipe that would turn heads at a gathering.
The crumble layer does just that.
It adds just a pinch of crunch and a really warm, yummy flavor.
If you know me at all, you’d know cheesecake is my ultimate favorite dessert!
I knew I could take pumpkin pie up just a notch with a cheesecake-inspired cream cheese layer.
The cream cheese layer add a creamy texture with just a hint of the cheesecake tart to the recipe.
It also gives these amazing pumpkin pie layer bars a beautiful presentation with four layers that each taste amazing.
I could seriously eat each layer by itself, but together it is magical!

Pumpkin Pie Layer Bars Recipe
Pumpkin Pie Layer Bars
This yummy pumpkin pie layer bar recipes will remind you of a perfect, creamy slice of pumpkin pie! Tender shortbread crust and crumble topping makes it a dessert worthy to share at gatherings! Everyone will love this Fall dessert for Thanksgiving. Sprinkle with pumpkin spice as a pretty garnish.
Ingredients
Crust & Topping~
- 2.5 sticks butter (1 1/4 cups), softened
- 2.5 cups flour
- 2/3 cup powdered sugar
- 1 cup oats
- 1/2 cup brown sugar
- 1 tsp cinnamon
Cream Cheese Layer ~
- 1 package (8 oz) cream cheese, softened
- 1/4 cup sour cream
- 1/3 cup sugar
- 1/2 tsp vanilla extract
- 2 eggs
Pumpkin Pie Layer ~
- 3 eggs, separated
- 1 can (15 oz) solid-pack pumpkin puree
- 1/2 cup packed brown sugar
- 1/2 cup milk
- 1/2 tsp salt
- 1.5 tsp pumpkin pie spice
- 1/2 tsp vanilla extract
- 1 envelope unflavored gelatin
- 1/4 cup water
- 1/4 cup sugar
- pinch cream of tart
Instructions
Crust & Topping ~
- Preheat oven to 350° F. Line a 9×13″ baking sheet with parchment paper, including sides.
- Combine softened butter, flour, and powdered sugar, and mix until it just forms a dough.
- Use 2/3 of your dough mixture to line the bottom of your baking dish. Press evenly across the bottom.
- Mix oats, cinnamon, and brown sugar into remaining dough forming medium sized crumbs. Spread crumble topping onto a baking sheet.
- Bake crust for 10 minutes and crumbles for 5-10 minutes, until golden. Set crumbles aside to garnish on top the Pumpkin Pie Layer Bars.
Cream Cheese Layer ~
- Beat cream cheese, sour cream, sugar, and vanilla until smooth.
- Add eggs, mix until combined.
- Spread cream cheese layer over crust. Bake for 20-25 mins, or until set.
Pumpkin Pie Layer ~
- Combine yolks (reserving whites aside), pumpkin puree, brown sugar, milk, salt, and pumpkin spice in a medium saucepan.
- Heat and stir over medium-low heat for 10 minutes or until mixture reaches 160° F.
- Remove from heat and stir in vanilla extract.
- In a small bowl, sprinkle gelatin over water. Let stand for a minute, then microwave for 30 seconds until dissolved. Stir gelatin mixture into pumpkin mixture.
- In a double boiler, combine sugar, egg whites, and cream of tartar. Beat with a hand mixer for 7-9 minutes until stiff and glossy.
- Fold egg mixture into pumpkin mixture and spread over cream cheese layer.
- Sprinkle crumble topping above pumpkin layer.
- Refrigerate 4 hours, or until firm. Garnish with a scoop of vanilla ice cream or whipped topping.
