Making these mini pineapple upside down cakes couldn’t be easier! Just gather the ingredients and with a few simple steps they will be ready for the oven in 5 minutes or less!
- Cut your pineapple rings into smaller pieces so they can easily fit inside your muffin tin.
- Prepare your cake layer by combining the dry yellow cake mix with vegetable oil, reserved pineapple juice, and eggs. Beat all these together with an electric mixer until smooth.
- Now, we will prepare the sweet brown sugar top coating. Combine brown sugar and melted butter. Scoop a small spoonful onto the bottom of each muffin tin.
- Next, layer your pineapple and add a cherry right to the middle.
- Finally, add a few spoonful’s of cake mix into each muffin cup.
- Now it’s time to bake – just pop your muffin pan into the oven at 350*F for 20-25 minutes or until the cakes start to turn golden on top. Flip upside down when done to serve!

- 1 can pineapple rings, with juice
- 1 cup pineapple juice (from can of pineapple rings)
- 1 box yellow cake mix
- 1/3 cup vegetable oil
- 3 eggs
- ½ cup brown sugar
- ⅓ cup melted butter
- Cherries
Instructions
- Cut pineapple rings into small pieces, so they fit into your muffin tin.
- Mix together yellow cake, vegetable oil, pineapple juice, and eggs together with an electric mixer until smooth.
- Mix together brown sugar and butter.
- Grease a muffin tin, then place a small scoop of brown sugar mixture in the bottom of each one.
